Welcome to Edition #22 of The Green Co-nversation. 👋

I’m Eris, one half of the Operations Team here at The Green Co. My days are usually spent packing your lovely orders, keeping things moving in the warehouse, sorting deliveries, checking stock and helping everything run smoothly behind the scenes. You’ll often find me answering customer emails too, so we may have already spoken. 😊

It’s been a busy month as we get ready for our upcoming Content Week. The team will be heading off on location to shoot fresh photos and videos of our products. We're very excited!

We’d love to start with your story. Can you tell us how ByRuby began and introduce the range of handmade meals and bundles you create today?

I used to work at a shop called Finns in Chelsea that my aunt started 40 years ago. At Finns we cooked delicious salads, soups, main courses and pates in the kitchen behind the shop. Our customers would come in and pick up dinner and increasingly they’d ask for a few things for their freezer to keep them going during busy time or holidays. At a similar time, I had my first baby, and my sisters filled my freezer for me, I couldn’t have received a nicer present and thought how nice it would be to be able to do the same for friends who lived further afield. My co-founder, Ruby was head chef at Finns at the time so together we thought there might be something in the idea of cooking and freezing food using great, natural ingredients. We tested recipes on the customers at Finns who were brutally honest and helpful and soon realised we didn’t have enough space to cook and freeze the food there. We took a kitchen in Acton, setup a website and started selling online.

Our food today is made in the same way as when we started. All handmade with great ingredients any good cook would have in their larder. We focus on crowd pleasing classics done really well – lasagne, curries, casseroles – we’re not afraid to add a good punch of spice of flavour – our food genuinely tastes homemade and I’m thrilled that I can now have a night off when I need it knowing that I can 100% trust our food and the ingredients that have gone into it.

Frozen food can sometimes be misunderstood, but it is a big part of what makes ByRuby work so well. Why was frozen the right choice for your meals?

Freezing is like pressing pause on the freshness until you’re ready to press play again. Freezing is natures way of preserving food without the need for artificial preservatives or additives.

Your dishes are made by hand to Ruby’s recipes. How do you decide which meals make it into your range, and what makes a dish feel truly ByRuby?

We tend to choose recipes Ruby and I would cook ourselves and freeze at home. Things that are a faff to make but are real crowd pleasers. It takes ages to make a lasagne but everyone loves it so we take out the hard work. We don’t tend to follow fads, we lean into the classics but like to include some more adventurous recipes like our curries. Most of our customers tend to eat our food for dinner and make an occasion of it at the table almost like an alternative to eating out or a takeaway, we try to think of how our customers are eating our food and why when we develop new recipes.

Your meals are made with carefully sourced ingredients from trusted suppliers. How do you choose what goes into a ByRuby dish?

We are obsessive about buying the best quality ingredients we can. We only ever use ingredients any good cook would have in their larder at home. You won’t find any weird sounding additives in our dishes because it’s not the way Ruby or I cook. We work with a brilliant development chef called Abi when we’re working on improving a current recipe or coming up with a new one. We pour over recipe books, refer back to family recipes and source as we would if we were cooking at home, only in slightly larger quantities!
